Southern Cinnamon Peach Loaf Breakfast Casserole

1/4 cup egg substitute
1 1/3 tablespoons brown sugar
1/2 cup milk
1 teaspoon cinnamon
4 slices bread, cubed
2 medium peaches, pared, cored and diced
3 tablespoons flour
2 tablespoons dark brown sugar
1/4 teaspoon cinnamon
Dollop of margarine

Spray two 5x3 inch loaf pans with cooking spray while preheating the oven to 350 degrees.
To prepare the bread mixture, in a medium bowl lightly beat the egg substitute and then mix in the brown sugar, milk, and cinnamon. Add the bread cubes and the peaches, stirring lightly. Let stand until all the bread has absorbed the liquid.
To prepare the topping, in a small bowl combine the flour, brown sugar, cinnamon and margarine with a fork.
Take the bread mixture and divide it equally between the two loaf pans. Sprinkle each with topping. Bake for 40 to 45 minutes or until golden brown.
Remove and let sit for 5 minutes before serving.
