Festive Spinach And Pepper Breakfast Casserole

1 pound sausage, browned and drained
6 slices of bread, cubed
2 cups cheddar cheese, divided in half
1/2 cup spinach, rough chopped
1/2 cup red bell pepper, chopped small
2 cups milk
6 eggs
1 1/2 teaspoons herb seasoning 

Combine the sausage, bread, cheese, spinach and red bell pepper in a large mixing bowl.
In another bowl beat together the milk, eggs, and seasoning.
Pour the egg mixture over the bread mixture and stir gently to combine.
Turn the combined mixture into a 9x13 inch baking dish. Cover with plastic wrap and refrigerate overnight or let set for an hour.
When ready to bake, preheat oven to 350 degrees.  Bake for 45 minutes, then top with the remaining cheese and bake for an additional 10 minutes or until cheese melts and browns a bit.
Remove and let stand 5 minutes before serving.
