Southwestern Zucchini Spicy Sausage Stuffed Peppers

2 red bell peppers, cut in half, white ribs and seeds removed
1/2 lb. bulk spicy sausage
3/4 cup zucchini, coarsely grated
1/4 cup fresh mushrooms, chopped
1/4 cup onion, finely chopped
2 tablespoons dry breadcrumbs
2 tablespoons fresh parsley, minced
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon fresh rosemary, chopped
1 egg, beaten
Parmesan cheese

Turn oven on to 350 degrees.  In a large bowl, mix the sausage, zucchini, mushrooms, onion, breadcrumbs, parsley, salt, pepper, rosemary and egg, mixing well. 2 cups soy crumbles (beef substitute)
1 cup chunky salsa, your choice
