Apple And Chicken Rice Casserole Recipe

1 cup long grain brown rice
2 cups water or broth
1 lb. skinless chicken, cut into thin strips
1 cup unsweetened applesauce
2 Tbsp apple cider vinegar

Preheat your oven to 350 degrees. Lightly oil a casserole dish.

Put the rice and water in the casserole, slightly stir together.

Lay the chicken over the top, arranging evenly.

In a bowl, stir together the applesauce and apple cider vinegar, then spoon evenly over the chicken.

Cover and bake in preheated oven for 40 to 50 minutes or until chicken is cooked thoroughly and rice is tender.

Serves 2 to 4.
