1 medium onion, diced
1 red bell pepper, diced
3 celery stalks, diced
2 regular (not baby) carrots, diced
2 garlic cloves, minced
1 lb smoked sausage or smoked ham, diced
12 cups chopped kale (be sure to trim off woody stems)
1 can (48 oz) chicken broth
1 can (14 oz) diced tomatoes
1 can (15 oz) cannelini beans, drained rinsed
1/2 tsp kosher salt
1/4 tsp black pepper
Put all ingredients in the slow cooker, mixing well to combine.
Cover slow cooker tightly, set temperature to LOW, and cook for 8 to 10 hours or until kale is tender.
Will serve 4 to 6.
