Mixed Berry Chicken And Rice Casserole Recipe

1 cup long grain brown rice
2 cups water
1 package (2 oz) sweet & sour sauce mix
1 bag (16 oz) frozen mixed berries
6 small chicken thighs, skin and bones removed

Preheat your oven to 350 degrees. Lightly oil a casserole dish.

In a bowl, mix together the rice, water, and package sauce mix, then dump into casserole.

Sprinkle the frozen mixed berries (may also use frozen fruit) on top of the rice.

Arrange the chicken over the top, pushing them gently into the rice/berry mixture. Season the chicken with salt and pepper as desired.

Cover tightly and bake in preheated oven for 1 hour or until chicken is cooked through and rice is tender.

Will serve 4 to 6.
