1 lb ground chicken
1 can (10 oz) golden mushroom condensed soup
1 bag (16 oz) frozen mixed peas and carrots
2 cups cooked mashed potatoes
butter
salt and pepper to taste
Preheat your oven to 350 degrees. Lightly oil a square or round shallow casserole dish.
Brown the chicken in a large skillet, breaking it apart. When cooked thoroughly add the soup, stir to combine, then add the frozen mixed vegetables, stir to combine, remove from heat.
Put this mixture in the prepared casserole dish.
Stop with smashed potatoes, spreading out evenly.
Dot with butter pieces, then add salt and pepper as needed.
Bake uncovered in preheated oven until the potatoes brown slightly on top and insides are nice and hot.
Will serve 4 to 6.
