1 medium size head cabbage, cut into shreds
2 onions, diced
2 green bell peppers, chopped
2 stalks celery, chopped
1 (28 oz) can diced tomatoes
2 (15 oz) cans broth, chicken, veggie, or beef
1/2 Tbsp curry powder, more or less to taste
Kosher salt and pepper to taste
Put all ingredients in a large soup pot, stir, and bring to a boil, cover and reduce heat to low; simmer for 15 to 20 minutes or until vegetables are tender.
Serve hot.
Will serve 2.
This makes a soup to satisfy any late night cravings, and you can eat as much as you want because it's so healthy.
