Asian Jicama Salad

1 pound jicama
3 Tbsp fresh lime juice
1 1/2 tsp Asian fish sauce
3 Tbsp chopped lemongrass
1 to 2 cups mixed lettuce greens
kosher salt and black pepper to taste

Peel jicama and slice into small, thin shoestring style strips.
In a large bowl, whisk together the lime juice, fish sauce, and lemongrass.
Add the jicama and the mixed greens to the bowl and toss to coat well.
Add salt and pepper to taste.
Serves 4.
