Southwestern Tomato And Green Chilies Hominy Soup

1 Tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
2 cans (14.5 oz size) diced tomatoes
2 cans (4 oz size) diced green chilies
2 cans (15 oz size) white hominy, drained
24 corn tortilla chips, finely crushed
3 cans (10 oz size) chicken broth
1 tsp cumin
1 lime, both zest and juice
3 Tbsp fresh cilantro, chopped

In a large saucepan, heat oil over medium heat. Once oil is heated, add the onion and sauté until softened. Now add the garlic and sauté just until fragrant, do not brown!  Add the tomatoes, chilies, hominy, crushed tortilla chips, chicken broth, and cumin, bring to boil, reduce to simmer and cook on simmer for 15 minutes. Remove from heat and add the lime juice, lime zest, and cilantro, stir and serve immediately.
