1 lb. pork tenderloin, sliced into thin circles, then into thin strips
3 Tbsp fajita seasoning, any Mexican blend spice you like
1 Tbsp olive oil
1 medium green bell pepper, sliced thin
1 medium onion, sliced thin
6 medium tortillas, any 'flavor'

Put pork tenderloin strips in a bowl, add the fajita seasoning and olive oil and toss to coat well. Heat up a large skillet until it gets sizzling hot, then add the pork, peppers, and the onion and quickly stir-fry until pork is done and veggies are softened and charred, but not mushy; remove from heat.
Put a 10 inch skillet on medium high heat and brown each tortilla on both sides. Remove and place hot tortilla on plate, spoon hot pork/veggie mixture into the center of each tortilla as they come out of the skillet, then spoon a bit of salsa into each and fold the tortilla over to serve. Serve hot. Spoon guacamole or sour cream alongside if you wish. Serves 6.
