Southwestern Cheddar Jack Bean Stuffed Pepper Boats

Cooking spray
3 bell peppers
1 cup corn
15 oz black beans, drained & rinsed
2 garlic cloves, minced
1 cup COOKED rice
1 teaspoon cilantro
1 1/2 teaspoon cumin
1/2 cup chopped sweet onion
1 ounce Cheddar cheese
1 ounce Pepper Jack cheese
1/4 cup water

Turn oven on to preheat to 350 degrees and spray a 9x13 baking dish with cooking spray.
Cut the bell peppers in half lengthwise, to make 'boats.' Remove seeds and white ribs and set in baking pan.  Combine the remaining ingredients, EXCEPT both cheeses, in a large bowl.  Fill the pepper boats, pour the water around the peppers in the baking dish.

Cover with tin foil and bake for 30 minutes. Remove the tin foil and sprinkle the peppers with the cheeses and return to oven, uncovered, and bake an additional 5 minutes.
