4 big ripe tomatoes, diced
1 stalk celery, diced
2 carrots, diced
1 green bell pepper, diced
1 small onion, diced
1 cup chopped parsley
1 bay leaf
2 cups water
salt and black pepper to taste
Put all the ingredients in a large pot, bring to a boil, reduce heat to low, cover pot, and simmer for 45 minutes, stirring often.
Remove from heat and stir vigorously to blend. You may push this mixture through a sieve or serve it chunky.
Will serve 2 to 4.
