2 stalks celery, diced
1 medium gold or red potato, diced small
1 medium green bell pepper, diced
1 medium onion, diced
1 clove garlic, grated
2 Tbsp olive oil
4 tsp rice flour
1 Tbsp chili powder
1/4 tsp dried thyme
1/4 tsp dried rosemary
1/8 tsp ground red pepper
1 can (14.5 oz) stewed tomatoes
1 can (12 oz) V8 Juice
1 1/2 cups diced cooked turkey (may substitute chicken)
Preheat oven to 375 degrees and grease a medium size casserole.
In a large pot, put the celery, potato, bell pepper, onion, garlic, and olive oil over medium heat and cook until veggies are softened.
Add all the remaining ingredients EXCEPT the turkey.
Stir and cook until bubbling hot.
Add the turkey, stir, then pour mixture out into casserole, cover, and put in preheated oven and bake for 20 minutes.
Remove and let stand a few minutes before removing cover. Serve hot in big bowls.
