Crispy Baked Rice And Mushroom Patties Recipes

1 cup uncooked sticky (Jasmine) rice
3 cups water
2 Tbsp cooking oil
1 cup finely diced onion
2 garlic cloves, grated
8 oz sliced fresh mushrooms, chopped fine
2 Tbsp fresh chopped parsley
1 tsp dried dill
1 tsp salt

Preheat your oven to 350 degrees.

Put the rice and water in a pot over medium-high heat, bring to a boil, reduce heat to low, cover pot and simmer for 20 minutes or until water is absorbed.

Meanwhile put the oil and onion in a skillet and saute until onion is tender, about 1 minute, then add the mushrooms to the skillet and continue cooking for 5 minutes. Add the garlic and cook for 1 minute. Set aside.

In a large bowl, stir together the parsley, dill, and salt, then add the mixture from the skillet and stir to combine.

Add the cooked rice to the bowl and stir until well combined.

Form the rice mixture into small, flat patties and set on an oiled baking sheet.

Bake in preheated oven for 15 minutes (turning once) or until patties are golden in color and crisped.

Remove from baking sheet to cool slightly before serving.

Will serve 4 to 6.
