Start with a fat-free or low-fat soup stock to create a low-fat soup. Use plenty of vegetables as well as lean meat to keep the fat content low in the soup. Once it is complete, cool the soup in the refrigerator before eating it. This will cause the fat to congeal and rise to the top. Then, all you have to do is spoon out the excess fat from the top of the soup. For each tablespoon of fat that you remove, you will save about 100 calories.
