1/2 lb smoked meaty ham bone
3 quarts fresh water
1 Tbsp Cajun seasoning blend (any you like)
1 Tbsp hot sauce
1 large bunch (12 cups or more) collard greens
1 Tbsp butter
Put the ham bone, water, seasoning mix, and hot sauce in a big soup pot, bring to a boil, reduce heat to low, and simmer (with lid on tilted slightly) for 1 hour.
Wash and trim the collard greens, removing any woody stems. Roll the leaves up together and chop coarsely.
Put the collards in the pot, add the butter, and replace lid loosely, then simmer gently for 45 to 55 minutes or until collards are tender.
Lift out ham bone and remove any good ham meat, then add the meat back into the collards, stir, taste and adjust seasoning as needed.
Serve hot as a side or main dish.
Will serve 4 to 8.
