3 cups water
1 cup smoked meat of any kind
1 small sweet onion, diced fine
1/2 Tbsp fresh grated ginger root
1 Tbsp hot pepper sauce
1/4 tsp cayenne
1/4 tsp ground cloves
2 garlic cloves, grated
1/2 tsp dried thyme leaves
2 lbs any mixture of greens (collar, turnip, mustard, kale)
Put everything EXCEPT the mixed greens into a large soup pot and bring to a boil over high heat, reduce heat to low, and simmer gently for 30 minutes.
Clean the greens, trimming off any woody stems, then chop into pieces, and add to the pot.
Simmer gently (with lid on pot loosely) for about 30 minutes or until greens are tender.
Will serve 4 to 6.
