3 lbs bone-in skinless chicken breasts (cut in half)
4 garlic cloves, grated
2 tsp dried crushed thyme
1/2 cup fresh orange juice
1 Tbsp good balsamic vinegar
Arrange the chicken in slow cooker.
Evenly sprinkle the garlic and thyme on the chicken.
Stir the orange juice and balsamic vinegar together, then pour around the edges of the chicken in the slow cooker (not over the chicken so you don't disturb the garlic and thyme.)
Set slow cooker to LOW, cover and cook for 6 hours.
When chicken is done cooking, remove with tongs and set on platter; cover to keep warm.
Pour the sauce that's left in the slow cooker into a saucepan and put over medium-high heat. Bring to a boil, reduce heat, and let simmer just until the sauce reduces and thickens slightly. Pour this sauce over chicken before serving.
Will serve 6 to 8.
