Fresh And Moist Zucchini Nut Bread

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/8 tsp salt
2 egg whites, slightly beaten
1 1/2 cup shredded zucchini
3/4 cups sugar
3 Tbsp cooking oil
1 tsp finely shredded lemon peel
1/4 cup chopped walnuts

Preheat oven to 350 degrees and grease a loaf pan.
In large mixing bowl, add the flour, baking powder, baking soda, cinnamon, and salt, and stir to combine well.
In separate medium bowl, add the egg whites, zucchini, sugar, oil, and lemon peel.
Add the zucchini mixture to the flour mixture, stirring just until combined, then stir in walnuts.
Pour batter into greased loaf pan.
Bake in preheated oven for 45 to 50 minutes or until wooden toothpick inserted in center comes out clean.
Remove and let cool slightly, then tip out of loaf pan to continue cooling.
Makes 1 loaf.
