1 lb fresh okra
1/2 cup corn meal
1/2 tsp salt
1/4 tsp black pepper
high heat frying oil, such as peanut oil
Cut okra into round pieces about 1/2 thick each.
Fill a paper bag with the corn meal, salt, and black pepper and shake together, then add okra and shake again.
Fill a heavy skillet up to about 1/4 inch with frying oil over medium hot heat, and when oil is sizzling hot, add the okra, but only enough that fits in the skillet.
Fry until okra is browned nicely, removing with a slotted spoon to a paper towel covered rack, and sprinkle with salt while still hot. Serve immediately.
Will serve 4 to 6 as a snack or side.
